Yes, my little chickens, Mrs Lyons has been beavering away with the exciting egg & dairy free range. So here, for your viewing pleasure, is another little delight. Vanilla seeds and dark chocolate shavings make a sweet and naughty combination for the topping .

Victorious
There is nothing quite like a good ye olde fashioned classic.
I was playing around in Mr L's oven this weekend and since I didn't have a recipe (i.e couldn't be bothered to look through the multitude of cook books) I decided to adapt my never-fail lemon snow cake recipe. I carry it around inside the junk room that is my head, so it's always handily to hand. I then had to adapt it to fit an 8" cake tin instead of my usual 6" cake tin so there was much fretting, oven opening and skewering with sharp implements. Result? A big fat fluffy sponge ready to be cut in half and filled with whatever took fancy. I plumped for the classic raspberry jam and double vanilla buttercream icing.
Scrum.

Simply Magical
We are very excited in our little cake boudoir today. A delightful little challenge was to be had thanks to a special request from our favourite customer. Vegan cupcakes. We have spent the last few nights pottering around in the cauldron in an attempt to come up with the ultimate range of dairy-free egg-free cupcakes.
Not easy! Especially as one simply refuses to compromise on flavour, texture, superbly high quality or decadence. I was determined this customer was going to be fulfilled beyond all measure.
After one particularly completely disastrous and hilarious attempt, much crossing of fingers, toes and everything else, one recipe is complete. Some delicate fine tuning may be required, however, behold! Beautiful, delicious light, moist, fluffy buns. Thick creamy decadent topping set to a satisfying ice-like crunch. The plus side to these is that the only naughty ingredient is the sugar. No butter, no milk, no eggs but heaps of flavour.
My little bad-boys-gone-good have been through a rigourous taste test and produced the desired result of satisfied moans and groans.
Here is a magical transformation to feast your eyes upon and start your taste buds a tingling.

Lemon Snow Cake
This cake is delightfully fluffy and airy with a tart, zesty outside. The initial bite is a hard lemon kick that gives way to a soft, soothingly light texture.
The lemon glaze is absorbed down through the cake by applying the glaze repeatedly whilst the cake is cooling. Lemon icing is drizzled carefully over the outside and a dusting of icing sugar at just the right time makes this cake look topped with the first snow of winter.
